About Demerara Sugar

A partially refined cane sugar with large, golden, crunchy crystals and a mild toffee flavour. Its crystals survive baking, making it the classic topping for crumbles, muffins, and brioche.

Why the Weight Per Cup Varies

Despite larger crystals, demerara's denser crystal structure gives the same 200g per cup as fine granulated sugar — and because it's dry and free-flowing, it never needs packing.

Names in Different Countries

Common in the UK/AU. US equivalent is "turbinado" (Sugar in the Raw); Australian equivalent is often labelled "raw sugar."

Common Recipe Uses

Crumble/muffin/brioche toppings, sweetening coffee and tea.

Substitutions

Turbinado or raw sugar substitute directly; granulated sugar substitutes for sweetness but without the crunchy topping effect.
