Yeast Conversion Reference
| Instant (tsp) | Active Dry (tsp) | Fresh (g) | Notes |
|---|---|---|---|
| ¼ tsp (1g) | ⅓ tsp (1.3g) | ~3g | Small loaf |
| 1 tsp (4g) | 1¼ tsp (5g) | ~9g | Standard loaf |
| 2 tsp (8g) | 2½ tsp (10g) | ~18g | Large loaf |
| 7g sachet | ≈2¼ tsp | ~21g | Standard UK/AU sachet |
Ratios: 1 tsp instant ≈ 1.25 tsp active dry ≈ 9g fresh yeast. Fresh yeast must be proofed; instant yeast can be added directly to dry ingredients.
Which Type Should You Use?
Instant yeast can be added directly to dry ingredients with no proofing. Active dry needs proofing in warm water first. Fresh yeast gives the most complex flavour but has a short shelf life.
