About Almond Flour

Made from blanched (skinless) almonds ground fine, almond flour is central to macarons, frangipane, and gluten-free/low-carb baking. It contains no gluten, so recipes rely on eggs or binders for structure instead.

Why the Weight Per Cup Varies

Ground almond particles are irregular and slightly oily, creating more air space than wheat flour — a cup weighs 96g, noticeably lighter than plain flour's 120g. The oil content also resists compression better than dry flour when scooped.

Names in Different Countries

"Almond flour" (US, blanched) is close to UK "ground almonds." "Almond meal" is coarser, skin-on.

Common Recipe Uses

Macarons, frangipane, financiers, gluten-free cakes, low-carb baking.

Substitutions

Cannot substitute 1:1 for wheat flour — no gluten, much higher fat. Use recipes specifically developed for almond flour.
