About Rye Flour

Milled from rye grain, this flour has an earthy, slightly sour flavour and very little gluten-forming protein, relying instead on water-absorbing pentosans for its characteristically dense, sticky dough.

Why the Weight Per Cup Varies

Coarser and less uniform than wheat flour, rye packs to about 100g per cup — slightly lighter than plain flour, since the irregular particles leave more air space even under light compression.

Names in Different Countries

Available as light, medium, dark, or pumpernickel (wholegrain) rye.

Common Recipe Uses

Sourdough rye, pumpernickel, crispbreads, gingerbread.

Substitutions

Not a 1:1 substitute for wheat — use as a partial addition (up to 30% of total flour) for flavour.
