The Core Problem with Volume Measurement

A measuring cup measures space, not substance. When a recipe calls for one cup of flour, it specifies volume, not mass — and mass depends entirely on how densely the ingredient is packed into that space. Weight, by contrast, measures mass directly: 100 grams of flour is 100 grams regardless of how it was scooped, stored, or handled. This is why every professional bakery, and most serious home-baking cookbooks outside the US, work in grams.

Why Different Ingredients Have Different Densities

One cup of plain flour weighs 120 grams. One cup of granulated sugar weighs 200 grams. One cup of honey weighs 340 grams. The cup is identical in every case — the ingredient is not. Using a single generic conversion factor for every ingredient, as many basic converter tools do, produces meaningfully wrong answers for a large share of what you’ll actually bake with.

Real-World Impact on Baking Results

The gap between a correctly and incorrectly measured cup of flour is typically 20–40 grams. In a two-cup recipe, that’s 40–80 grams of excess flour — enough to visibly dry out a cake, stop cookies spreading properly, or stiffen bread dough. The effect is most pronounced in flour-heavy recipes like shortbread and scones, and least pronounced in high-fat recipes like brownies, where the fat partially compensates.
